Aha, GUMBO!

GUMBO is the perfect catch all for the remains of a holiday….the rest of that onion you didn’t use entirely, extra celery that didn’t make it into the stuffing, some okra that….yeahhhhh, you’re gonna hafta go buy that one:) But you definitely have the main thing and that’s your meat…the turkey.

You could be methodical and slice off pieces of meat or just tug and pull off the meat from the bone; besides fingers are better as you get to the under belly which has THE most tender meat! Anyway, here goes:

Ingredients

Turkey remains

Water

Okra

celery

roux

smoked sausage

onions

garlic

pepper

salt

shrimp, crab legs, oysters optional

Bring the turkey to boil with water, add bay leaves, sage and seasonings to create a strong base. Stir in roux/thickener to your desired thickness, add pepper, garlic and onions, cook for about 5 minutes. Add okra, celery, pepper, seasonings. Let cook for about 15mns. Add smoked sausage allow to boil about 5minutes. Add seafood last. Reduce heat, cover and let simmer for about 30minutes. Serve over rice, garnished with smoked oysters (optional)
